Easy Pineapple Upside-Down Cake
Ingredients:
Topping:
- 1/4 cup unsalted butter
- 1/2 cup light brown sugar
- 7-8 pineapple rings
- Maraschino cherries
Cake Batter:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup pineapple juice (from the canned pineapple)
Instructions:

Preheat oven to 350°F (180°C) and grease a 9-inch round cake pan.

Melt 1/4 cup butter in a saucepan, add brown sugar, and pour into the cake pan. Arrange pineapple rings and place cherries in the centre of each.

In a bowl, whisk flour, baking powder, and salt.

In another bowl, cream butter and sugar, add eggs one at a time, then stir in vanilla. Alternately add dry ingredients and pineapple juice.

Pour batter over pineapple slices and bake for 40-45 minutes until a toothpick comes out clean.

Cool for 10 minutes, invert onto a plate, and let it cool completely.
